As a husband-and-wife team with over 20 years of culinary experience, we’ve spent our lives perfecting our craft and creating unforgettable experiences across New England and beyond. 603 Feast is the embodiment of our combined journey, fueled by passion, creativity, and a commitment to serving those who trust us to bring them together through food.

Meet the Team

Our chef’s journey began alongside his grandfather, a retired Command Sergeant Major from Puerto Rico who was raised by humble farmers and hunters. A soldier in Korea and Vietnam, his grandfather turned the hardship of war into opportunities for survival and feast, hunting wild pigs and pigeons to feed his unit. Those fireside stories instilled in our chef a deep respect for resourcefulness and the importance of food in bringing people together. Growing up, he watched his grandfather and uncles roast whole pigs for family gatherings—these cherished memories shaped his passion for cooking and for celebrating life’s milestones with food.

His connection to New England is just as profound. On his other side, his grandfather was a lobsterman, farmer, and bare-knuckle boxer on Salisbury Beach. Though they were not particularly close, this grandfather’s rugged spirit and his reverence for the region’s cold-water bounty remain an influence to this day. From these two men, our chef forged a life blending land and sea, resilience and flavor, and a deep respect for what the land and sea provide.

After years of honing his skills in Hawaii, blending New England flavors with Pacific influences, our chef developed a unique fusion of cooking styles that elevate both traditions. His understanding of slow-roasting meats combined with his knowledge of fresh seafood allows him to craft a pig roast and seafood boil that are both rooted in tradition and creatively modern.

But this culinary journey would not be complete without Amanda-Joy, his partner in both life and business. Raised in a family where food and cooking were always a priority, Amanda grew up under the guidance of her father, an incredible chef who instilled in her a passion for food, creativity, and the discipline required to bring it all together. From a young age, she learned to embrace the bold and delicate flavors that make every dish an experience of its own.

As a chef, Amanda has not only mastered the art of creating delicious meals but also taken her expertise to the next level by mentoring restaurant owners and helping them with menu development, consulting, and business strategies. Her creativity and ability to design menus that reflect local culture while delighting customers have made her a trusted advisor to many across New England.

Together, JP and Amanda have catered for events all across New England, running successful cafes, BBQ joints, and other culinary ventures. Their combined experience has refined their craft and deepened their respect for the local vendors and sustainable practices that support the New England food scene. From roasting pigs to steaming lobsters, they’ve learned how to elevate these classic dishes using the freshest ingredients and most innovative techniques.

The business is a family affair, with each child actively involved in the day-to-day operations, learning valuable lessons about hard work, respect for ingredients, and bringing people together through food. Whether they’re tending to the family gardens, raising livestock, or simply spending time outdoors, the family’s deep connection to the land and nature drives their passion for sustainability and local food.
